Carrot Spice Muffins


Nancy of  The Dogs Eat the Crumbs chose Carrot Spice Muffins for this weeks Tuesdays With Dorie.  I love muffins.  They are simple, quick and easy.  There is something so homey and comforting about fresh baked muffins.  Bake these and enjoy them with your morning coffee. 

PS:  I accidentally left out the raisins and they were still great.

I left the raisins out on purpose..I thought why ruin a perfectly yummy muffin!
They look great and Im glad you enjoyed them! I loved how moist they were. Next time Im adding a buttermilk glaze to the tops:)

These are great muffins and lend themselves to many variations. I liked the sweetness the raisins added. I've also had them with pineapple and chopped apple. I particurly liked the spices in these.

The best thing about muffins with a lot of add-ins: if you leave one out, either accidentally or on purpose, they'll still be tasty! Yours look delicious. Thanks for baking along with me this week.

I only had about 1/4 cup of raisins left in my raisin box, so that's all I used...enough for me! They look great.
