TWD Coconut Tea Cake
This weeks selection for Tuesdays with Dorie is Coconut Tea Cake and it was chosen by Carmen of Carmen Cooks. My apologies for the picture, this is a much prettier cake than my picture shows. I loved the texture of this cake. It is similar to a pound cake but lighter. It has a mild coconut flavor. I added the rum but I really couldn't taste it in the finished cake. The cake improves after sitting overnight. It become more moist and had a richer coconut flavor. I think that a lime glaze would be a great addition to this cake. If you are a coconut lover then this cake is for you.

Dulce de Leche Duos
Chocolate or Caramel? If you have a choice which do you pick? I will pick chocolate most of the time. My husband on the other hand will almost always pick caramel. These cookies made his eyes light up. He couldn't wait for them to cool enough for me to add the filling. These cookies are light as a feather. The dulce de leche filling made these cookies delicious. They are good even if you are a chocolate cookie lover.
I confess that I used store bought dulce de leche for the filling. I have used the boiling on the stove top method and was scared by the whole thing. The crock pot method looks a lot safer so next time I plan on trying it. Thanks so much to Jodie of Beansy Loves Cake for picking these wonderful cookies.

Thumbprints for Us Big Guys
This weeks recipe for Tuesdays with Dorie is Thumbprints for Us Big Guys, and it was chosen by Mike of Ugly Food Dude. I must confess that I have never made thumbprints. I don't know why but they never got to the top of my baking list. Well, shame on me. These cookies are great. They are quick (no chilling time) and easy to make. I promise that I will not wait so long to bake these little gems again.
Notes: I used almonds instead of hazelnuts and red raspberry jam. I thought that this was a great flavor combination. I only made half the recipe and got about 20 cookies.

TWD Toasted-Coconut Custard Tart
Toasted coconut in a creamy custard, whipped cream, and rum. What a great flavor combination. I love it. It is one of my favorites. If you like coconut cream pie then you will love this tart. Don't leave off the toasted coconut on the topping. It makes such a nice finishing touch. Thanks so much to Cinemon Girl for hosting this weeks Tuesdays with Dorie.
